Caribbean Fine Dining comes to
Crystal Palace!

 

 

 

 

Island Fusion has recently opened with the aim of bringing Caribbean Fine Dining to South East London. The head chef, Arran Woods, who learnt his skills at the Hilton Tobago before mastering his art at the Hilton, Park Lane London, has created an innovative menu that is influenced by European and Asian Cuisine while maintaining a strong Caribbean identity.

Examples of the starters served at Island Fusion include: Aubergines Stuffed with Sweet Potato v (£6.95) - Aubergine filled with sweet potato and cheese garnish with balsamic vinegar; Barbados Duck (£6.95)- A Milled Duck curry with coconut and coriander seared on dumplings; Island Crab Back (£5.50) Marinated in Sauté onions and Garlic Sprinkle with Breadcrumbs

Main courses include: Spiced Crackling Pork Belly (£10.95) - Marinated in tamarind essence with served sweet potatoes; Caribbean Lobster (£16.95) - Char-grilled as you like lemon garlic or tomato herb butter, served with sauté potatoes; Stuffed red peppers with pumpkin risotto (V) (£9.95) -Set on spinach leaf and coconut sauce

The décor has been designed to transport the diner to a Caribbean beach bar. This lush, tropical interior provides a perfect backdrop to the original marriage of Traditional West Indian and Modern European cuisine.
