A top chef was
needed for the project and Chef Marco Di Tullio was brought in from
the Marriott Monte Carlo after stints in Caesars Palace Las Vegas and
other top hotels. A previous fusion restaurant in the hotel had not
quite hit the spot so it was decided to go for an up-market Italian
serving simple but high quality food.
Hotel
restaurants can often be disappointing but a full house showed Al
Dente was not in that category when we visited. The décor is
smart and the atmosphere relaxing but most importantly, the service
is impeccable. The menu includes such delights as Prawn tails with
pink peppercorn dressing and fennel orange salad - Two colours home
made taglioni with creamy mascarpone sauce, fava beans and crispy
pancetta - Grilled blue fin tuna steak and Pan seared Greesingham
duck breast, leg and liver cured in honey and balsamic vinegar.
We tried small
samples of the wonderful homemade pasta, tasty risotto and fantastic
carved Italian ham with fresh Reggiano parmesan as well a red wine
sorbet and, of course, tiramisu.
The Sheraton
Skyline first opened in 1971 and has long been considered one of the
top Conference hotels. Al Dente can only add to its reputation and is
well worth the visit.
