Fine food
suppliers, TFC Express, has been providing world famous Wagyu beef to
London's industry-respected restaurants since 2001 and is expanding
after securing a unique contract with a Chilean producer that will
increase the supply of Wagyu meat. The new Chilean supply which is
shipped chilled will ensure Wagyu Beef is readily available to chefs,
enabling them to include it on their menus and subsequently allowing
more customers to enjoy Wagyu Beef. |

Company
founders, husband and wife team, Leon and Sarah Aarts are both
trained chefs and run the company on the ethos 'for chefs by chefs'.
They source the beef directly from producers and ensure that the meat
they sell has fully traceable records with appropriate provenance.
Wagyu is the Japanese breed of cattle used to produce Kobe Beef, a
type of meat that is deeply marbled and contains a much higher
percentage of unsaturated fat when compared to other breeds of
cattle. The succulence of the meat is down to the genetics and the
grain on which the cattle are fed which gives Wagyu Beef its unique
taste and texture. Technique is key when cooking Wagyu Beef,
quick-searing ensures the beef retains its fat as when it is cooked
too long, the fat will melt, causing it to drip, and in turn result
in a tough, dry meat.

Wholesale
prices for top end cuts are based on the marbling grade of the eye
muscle, fat colour and flesh colour and ribeye prices start at
£60 per kilogram. Cheaper cuts such as roasting joints are
available from £15.00 per kilogram, Wagyu steak prices start at
£18.00 per kilogram and trimmings sell for £9.00 per
kilogram. TFC ships all its its products chilled and it is delivered
boxed on dry ice.
