IT'S MEXICAN FOOD, BUT NOT AS WE KNOW IT

 

 

Promising to revolutionise the way we think about Mexican food, Cantina Laredo - launching in the UK this summer - will bring the fresh and vibrant tastes of authentic Mexican cuisine to discerning diners.

Faithful to the way in which Mexicans have been cooking - and enjoying - their cuisine for generations, Cantina Laredo is a far cry from the Tex-Mex meal kits or the quick service restaurants the UK market has been used to.

Cantina Laredo's first UK restaurant will open at St. Martin's Courtyard - London's newest aspirational shopping and lifestyle destination - with 35 more restaurants planned to be rolled out nationwide.

Honouring the Mexican tradition of investing time and passion into sourcing, preparing and cooking fresh, wholesome food, each of Cantina Laredo's twenty cooking sauces (including the sixteen-ingredient, sweet and spicy Mole and the complimentary Roasted Tomatillo and Roasted Tomato Salsas) will be made from scratch, each day. Enchiladas will be hand rolled by chefs trained in traditional methods and Cantina Laredo's Top Shelf Guacamole will be freshly prepared at the guest's table.

Across the menu, there is an equal emphasis on colour, aroma and flavour from dishes such as the palate-freshening Ceviche (a traditional dish of tiger prawns, grey mullet and bay scallops marinated in lime juice and served with a selection of vegetables and spices) and the hearty Camaron Poblano Asada (a classic Mexican poblano pepper filled with a delicious mixture of sautéed tiger prawns, mushrooms, onions and cheese and wrapped with a grilled skirt steak on a bed of chimichurri sauce) to the mouthwateringly-scented, sizzling skillet of home-baked Mexican brownies, served with brandy butter sauce and cinnamon ice-cream.

Cantina Laredo will comfortably seat 220 customers in a sophisticated, yet informal environment. The focal point, will be a sweeping, solid limestone bar, stocked with a world-class selection of wines, beers and, of course, the spirits that go into Cantina Laredo's extensive range of cocktails. The crowning glory of the cocktail menu is the 'Casa Rita' margarita, made with freshly-squeezed lemon and lime juices and served frozen or on the rocks. Variations on this frozen classic incorporate mango or pomegranate purée.

No true Mexican experience would be complete without tequila and Cantina Laredo will offer a range of over 30 of the world's very best, 100% blue agave varieties. These are sourced (and tested!) by a dedicated team who encourage guests to develop an appreciation of the spirit akin to that of the whiskey connoisseur. The Cantina Laredo tequila flight will provide an inviting introduction to the plata, reposado and añejo tequila varieties.

Each month, Cantina Laredo will host a 'Tequila Dinner' encouraging people to learn more about the famous spirit which was first made almost 700 years ago and is still produced today from hand-harvested agave plants. A private dining area, which comfortably seats 20 people, will be available to guests for celebraçions. For those wanting to be more 'a part of the action', an al fresco terrace overlooking bustling Upper St Martin's Lane, will be perfect for a chilled hand-muddled Mojito.

Cantina Laredo believes that exceptional food should always be complemented by excellent service. 'Happy To Do It' is at the core of Cantina Laredo's philosophy and ensures that every guest is provided with a highly personalised and extra-special experience.
