Japanese food has a firmly established reputation as being amongst the healthiest in the world, and the Japanese are known to retain their youthful appearance and to live longer than almost any other people. Fresh Japanese contains over 80 light, refreshing recipes which reflect the simplicity and elegance of Japanese cooking.

All recipes are accompanied by simple techniques and information on unusual Japanese ingredients. Classic dishes and regional specialities are included along with contemporary ideas to make dinner time a varied and exciting culinary experience for the whole family.

Yasuko Fukuoka was born in Tokyo. She studied music composition and toured around Japan extensively as a musician. This experience and a deep interest in food inherited from her mother, resulted in her following a unique combined career as a Japanese regional food and drink specialist and composer. Since moving to England, Yasuko has gone on to establish herself as an award-winning food writer and journalist.
