Goan cuisine is one of the most exciting among the Indian cuisines.
It is famous for its whole repertoire of seafood, as well as coconut
based curries and of course is the home of the vindaloo. This winter,
from Monday 1 February until Sunday 28 February, Chutney Mary will be
serving a wider range of the tastiest Goan dishes.
Situated on the west coast of India, Goa was ruled by the Portuguese
for over 150 years. They brought to India from the New World the red
chilli, the tomato, the use of vinegar and contributed to creating
the alfonso mango. The cuisine this created was a blending of these
products, the spices of North Kerala which abuts Goa, and the produce
of the surrounding countryside of Konkan which bases its cuisine on
rice, the freshest coconut, seafood, tamarind and herbs such as
coriander and curry leaves.
Goan specialties on the menu will include squid Goan style, the
famous Goa prawn curry, green chicken curry, masala roast duck, the
lamb shank shakuti and several others. A special cocktail served will
be with muddled fresh lime, mint leaves and vodka, known as 'Goa on
the rocks'.
Chutney Mary has had a Goan chef as part of its team since its
founding twenty years ago. Its talented chefs serve specialties from
all over India pared with fine wines, in an opulent and romantic setting.
