Island Fusion Comes To Epsom

There are not a vast number of Caribbean restaurants in the UK, so it is not always easy to find one where you can experience Caribbean cuisine. A great advocate for the cuisine over the years has been Orlando Satchell. As Senior Chef and Consultant for the Ladera Resort Hotel in St. Lucia, its restaurant Dasheene became Orlando's signature. He regularly devised new menus, and trained chefs. The restaurant is a haunt for the celebrities such as Bill Gates, and Michael Winner. If you want to reserve a room at the Ladera, book well in advance - it is that exclusive. If you are in St. Lucia, try booking for lunch or dinner. Be prepared for a spectacular view because it is high up in the hills overlooking the sea.

Orlando has traveled around the world promoting Nouvelle Caribbean Food. The idea is not to plonk the food on a plate, and think the taste is enough to sell it. Making an artwork of food is a major strength in marketing food. His travels have included going as far afield as Moscow and Singapore. Now he has a new restaurant in Epsom, which works out a little cheaper than travelling to St Lucia to try his food.

Lime is a new international fine dining restaurant and cocktail bar offering a unique style of cooking.

Orlando Satchell, the Executive Chef, with his world renowned culinary skills has been evolving his expertise on several continents for the past twenty five years. His fusion menu is a clear reflection of these influences, with a combination of exciting tastes and textures.

Lime's menu introduces some neglected ingredients from around the world alongside the best of the better known ingredients, and utilises the marinating of meats with a range of spice combinations to give dishes their unique flavour and texture.

Chef Orlando believes the taste, style and presentation of the food will give diners a real sense of connection with the finest the world has to offer, from the fun and flavours of the world's most exotic islands to the clean presentation of French cuisine.

Lime's signature dish is Chef Orlando's roasted garlic shrimps, (pictured above), which feature pan fried roasted shrimps marinated in coconut milk, lime, garlic and ginger, and served on a plantain salad with red chilli oil. This is available as a starter or a main course. The menu also includes some traditional dishes with an island fusion touch such as the Lime fillet of beef, rubbed with a tropical mix of herbs and spices; roasted cod with lime; fusion loin of lamb with Creole spices; and pepper pot Cornish hen. Vegetarian options are also included.
