First
Grouse Of The Season Will Be Across The Pond Within 48 Hours
|
Scotland's
largest game supplier, Braehead Foods in Kilmarnock, will be ensuring
New York diners have the first grouse of the year on their tables
just 48 hours after the start of the shooting season in the UK on
Saturday 12 August.
Craig
Stevenson, Managing Director of Braehead Foods, who takes wild game
from over eighty Highland estates and supplies the UK's premier
chefs, says "It's always the first challenge of the season, not
just to fulfil demand on the top tables around the UK but getting
some of our best birds 3500 miles across the Atlantic before Monday.
We do it every year, and yet the race to get it there on time always
keeps the adrenalin pumping".
Andrew
Hamilton, Managing Director of Scottish Wild Harvest in New Jersey,
who imports oven-ready grouse from Braehead Foods to supply New
York's elite restaurants, is looking forward to their arrival, "I
work with some of the top restaurants in New York whose diners love
the ritual of the first grouse of the season. It is such a delicacy
here, and when it arrives so fresh you can almost taste the Scottish
heather! We use Braehead Foods because they are the best in the
business, and we can rely on them to get the quality of game our
customers demand, at the earliest possible time."
The shooting
season opens with the traditional Glorious Twelfth, and Craig
Stevenson is looking forward to another prosperous year. Year end
figures illustrated the constantly increasing demand for game, with
Braehead Foods boasting a 34% increase in turnover. This follows the
announcement of a 75% increase in venison sales year on year.
Stevenson comments, "Game is an upmarket product at a
comparatively cheap price. People are beginning to appreciate its
value, but we need to keep promoting it."
