With a list
price of £2,650, the FXBC10 Blast Chiller is 15% cheaper than
Foster's previous Economy Blast Chiller.
The new blast
chiller is compact, and with a capacity of 10kg it is ideal for small
or low volume kitchens. It is capable of blast chilling product from
70ºC to 3ºC within 90 minutes, ensuring food quality is
maintained and that HACCP food safety laws are complied with.
Current food
legislation requires that all food must be cooled as quickly as
possible. This means that whenever food is chilled or frozen, it must
be in the "Danger Zone" between +8ºC and +68ºC
where bacteria multiply fastest, for as little time as possible.

Blast chilling
can be a great way of reducing wastage. For example, left over food
remaining from a hot servery counter can be quickly and safely
chilled for later use with complete confidence in its quality and
safety. In addition, advance food preparation lets you conveniently
prepare larger batches and then chill for later use. Once prepared
and chilled, only the correct numbers need be reheated, as
legislation states that chilled food can be safely kept below
+3ºC for up to 5 days after production.
