Consumers are
increasingly travelling to the Mediterranean and returning eager to
create the same taste experience. Andrew Bailey, commercial director,
OOH Food for Nestlé FoodServices explains that Maggi 'A
Natural Choice' Mediterranean Ready to Use Sauces have been specially
created to help chefs produce new flavours and deliver more
interesting and complex regional dishes. He explains:
"Ironically,
despite a recent survey* showing that British consumers are most
inspired by the taste of the Mediterranean - the ready to use sauce
market has been dominated by Oriental and Asian style options. No
longer! Chefs are now be able to cater for this growing demand out of
home by creating an array of truly authentic tasting, Mediterranean
style dishes that look good&ldots;. taste superb.&ldots;..and, of
course, deliver an exciting menu which will keep customers coming
back for more."
The range
delivers that 'made from scratch' taste and features six delicious
options - Spanish, Italian, Moroccan, Piri Piri, Provencale and
Greek. Each pack features an exciting and contemporary Mediterranean
recipe suggestion to give the user fresh ideas on how to dish up 'a
taste of the sun'!
These
versatile new sauces can also be used as a pour over sauce, marinade
or dip. All are suitable for vegetarians and made using sunflower
oil, containing the finest ingredients and have no added MSG, are
gluten free and contain less than 0.5g of salt/100ml.
Innovation has
been the order of the day, not only in terms of ingredients and
flavour profile but also with regards to functional packaging. Maggi
'A Natural Choice' Mediterranean Ready to Use Sauces come packed in
convenient 2 x 2kg plastic bottles featuring wide lids which allow
them to be stood on end to reduce waste. The 2kg bottles equate to 20
portions and all the packs have a useful measuring scale to ensure
accurate portion control and an innovative time strip device to
determine freshness.

Ingredients
Kefteslakia
1.5kg (3lb 5oz
lean lamb mince)
1 tsp cinnamon
1tbsp dried
mint or a small bunch of freshly chopped mint
Freshly ground
black pepper
1kg (2lb 4oz)

Potato Salad
2.5kg (5lb
8oz) new potatoes
4 tbsp extra
virgin olive oil
Zest and juice
of 1 lemon
Freshly ground
black pepper

Method
Place mince in
a bowl and add the cinnamon, chilli and black pepper. Mix thoroughly
and roll into cherry tomato sized balls. Place on a lightly greased
foil-lined baking sheet. Bake at 200°C, 400°F, Gas Mark 6
for 10 - 15 minutes until browned.
Boil the new
potatoes for about 10 - 15 minutes (depdendent on size) until tender
and immediately toss with olive oil, lemon zest and juice and season
generously with balck pepper.
Place the
kefeteslakia balls and potatoes into separate bowls. Heat the sauce
through, pour into another separate dish and serve.

salad, battered Calamari
TIP
For
authenticity use Greek extra virgin olive oil for a delicious fruity flavour.
Always dress
the potatoes just after they have been cooked as the heat helps the
dressing absorb into the potatoes allowing the full flavour to penetrate.
