founder Iqbal Wahhab has bought a pair of Hunter wellies and with
head cook Lawrence Keogh is visiting a number of farms around Britain
over the coming months.
A visit to
Northfields Farm has resulted in an experiment with a cross breed of
Native Aberdeen Angus and Dexter cattle. Future visits include going
to Jody Sheckter's Laverstoke Park, Farmer Sharp's Herdwick Mutton in
Cumbria, as well as Sillfield Farm where Peter Gott is starting to
make bespoke bacon and sausages for the busy Borough Market restaurant.
Lawrence Keogh
is on a mission to make the perfect bacon butty, as Iqbal is soon to
launch a luxury sandwich stall just by the entrance to the restaurant
using bread freshly baked in the market.
