Pecorino
cheese, grated |

Parmesann

ground black pepper to taste |
Method:
Brown bacon
strips gently over a low heat in a large, heavy-based saucepan.
Whisk the
cheese into the eggs until smooth.
Meanwhile,
cook pasta until 'al dente', drain well and put into the pan with the bacon.
Pour the egg
and cheese mixture over the pasta and mix quickly over a very low heat.
Add pepper to
taste and serve immediately
