Carbonara

A Classic, basic sauce, used in many recipes

Serves: 4

Cooking: 15 minutes

Preparation: 10 minutes

Ingredients:

125g/4oz

streaky bacon, cut into thin strips

2x med.

egg yolks, lightly beaten

50g/ 2oz

Pecorino cheese, grated

50g/ 2oz

Parmesann cheese, grated

freshly ground black pepper to taste

Method:

Brown bacon strips gently over a low heat in a large, heavy-based saucepan.

Whisk the cheese into the eggs until smooth.

Meanwhile, cook pasta until 'al dente', drain well and put into the pan with the bacon.

Pour the egg and cheese mixture over the pasta and mix quickly over a very low heat.

Add pepper to taste and serve immediately

Recommended pasta: long pasta; ribbon pasta; shapes.
