Italians
seem to have very definite and very strongly held ideas on which
sauces should or should not be served with different types of pasta.
Basically, though, a lot of the rules they hold dear just happen to
be plain old, tried and tested, common sense. After all, they have
been eating the stuff for centuries - they should have discovered
what does and doesn't work!
