Crostini

Ingredients:

8 small

round slices crusty bread

olive oil

2 cloves

garlic, peeled and crushed

50g/2 oz

sun dried tomatoes, mashed

 

freshly chopped parsley leaves

Method:

Pre-heat oven to gas mark 4/180°C/350°F.

Brush the bread rounds generously with the olive oil.

combine the garlic and tomatoes in a small bowl and spread over the bread.

Place on a pre-heated baking tray and bake for 20-25 minutes until golden brown.

Serve sprinkled with fresh chopped parsley
