Tomato & Mozzarella Salad

Preparation: 10 minutes

 

Ingredients:

4

ripe plum tomatoes, thinly sliced

1x225g/ 8oz pack

Mozzarella cheese, drained & thinly sliced

45ml/ 3 tbsp

Extra Virgin Olive Oil

15ml/1 tbsp

white wine vinegar

 

salt & freshly ground black pepper to taste

 

fresh basil leaves

Method:

Arrange the tomato & cheese slices alternately on a large shallow serving dish. Mix the oil, vinegar and seasoning together and drizzle over the salad.

Tear up the basil, sprinkle over the top to garnish and serve.

Variations:
* substitute sun-dried tomatoes and use the oil from the tomatoes in the dressing.

* substitute balsamic vinegar in place of the white wine vinegar.
