tomatoes, thinly sliced |

Mozzarella
cheese, drained & thinly sliced |

45ml/ 3 tbsp |
Extra
Virgin Olive Oil |
|
15ml/1 tbsp |
white wine vinegar |
|
|
salt &
freshly ground black pepper to taste |

|
fresh basil leaves |
Method:
Arrange the
tomato & cheese slices alternately on a large shallow serving
dish. Mix the oil, vinegar and seasoning together and drizzle over
the salad.
Tear up the
basil, sprinkle over the top to garnish and serve.
Variations:
* substitute
sun-dried tomatoes and use the oil from the tomatoes in the dressing.
* substitute
balsamic vinegar in place of the white wine vinegar.
