Venetian Potato Cakes

Ingredients:

450g/1lb

potatoes, unpeeled

to taste

salt for cooking

50g/ 2oz

butter

125g/ 4oz

sugar

150g/5oz

plain flour

1

egg

 

vegetable oil for frying

Method:

Cook the potatoes in salted boiling water. Drain, skin, mash and leave to cool.

Pre-heat oven to gas mark 4/180°C/350°F.

Melt the butter and add to the potatoes. Stir in the sugar, flour and egg, incorporating well. Form into small cakes.

Heat the oil until smoking and fry the cakes until golden on each side.

Place onto an oiled baking sheet, bake for 15 minutes and serve immediately.
