Roast Beef

One of the most popular and leanest cuts of beef for roasting is topside.

When buying topside, allow 225-300g/8-10oz per person. This will give enough meat to serve as a hot roast on Sunday with some left over for sandwiches on Monday.

To roast the joint weigh and calculate the cooking time:

Rare:

20 minutes per lb plus 20 minutes

Medium:

25 minutes per lb plus 25 minutes

Well Done:

30 minutes per lb plus 30 minutes

Method:

Place the beef joint on a rack in a roasting tin, this allows the fat to drain away from the joint during cooking.

Cook in the centre of a pre-heated oven at Gas Mark 4/180°C/350°F

Before carving the joint let it rest for about 10 minutes to allow the juices to set and to make carving easier.
