Chilli Mince

Ingredients:

450g/1lb

fresh, lean minced British beef

1

onion, peeled and sliced

400g/14oz

can red kidney beans, drained and rinsed

200g/7oz

can baked beans

5ml/1 tsp

chilli powder

salt to taste

150ml/¼ pint

beef stock

15ml/1 tbsp

cornflour, blended with 30ml/2 tbsp cold water

Method:

Put the mince into a cold non-stick saucepan without adding fat and heat gently until some fat runs out.

Add the onion and increase the heat. Continue to cook until the mince is brown and the onion softened.

Stir in the rest of the ingredients except the blended cornflour.

Bring to the boil, cover and simmer for 30 minutes.

Add the blended cornflour and cook, stirring, until thickened.

Serving suggestion: Serve with jacket potatoes
