Pork Slices with Barbecue Sauce

Ingredients:

450g/1lb

lean British pork belly slices

1

onion, peeled and chopped

15ml/1 tbsp

corn or sunflower oil

15ml/1tbsp

tomato purée

10ml/2 tsp

white wine vinegar

300ml/½ pint

unsweetened orange juice

15ml/1 tbsp

brown sugar

15ml/1 tbsp

Worcestershire sauce

Method:

Cook the belly slices under a pre-heated grill for about 7 minutes each side, dependong on thickness.

Meanwhile, sautée the onion in the oil until softened.

Stir in the remaining ingredients and bring to the boil. Simmer for 10 minutes.

Serving suggestion: Serve with boiled brown rice.
