Camarones con Almendrados
(King Prawns in Almond Sauce)

This creamy, lightly spiced dish using Discovery Enchilada
sauce is simplicity itself to make.
Using King Prawns is expensive but their extra succulence makes it worthwhile.

Ingredients:

2 tbsp

oil

1 large

onion, peeled and finely chopped

2 sticks

celery, finely sliced

1 clove

garlic, peeled and crushed

1 jar

Discovery Tijuana Enchilada Sauce

50g

ground almonds

142ml

double cream

250g

peeled Kking prawns

Method:

1) Heat oil and gently fry onion, celery and garlic until softened but not browned.

2) Add Enchilada Sauce, ground almonds and cream, and bring to the boil.

3) Add prawns and simmer gently until heated through.

4) Serve over rice or in Discovery Tortillas or crisp taco shells with shredded lettuce.
