Method:
1) Heat oil
and gently fry onion, celery and garlic until softened but not browned.
2) Add
Enchilada Sauce, ground almonds and cream, and bring to the boil.
3) Add prawns
and simmer gently until heated through.
4) Serve over
rice or in Discovery Tortillas or crisp taco shells with shredded lettuce.
