6 ripe
mangoes, peeled and pitted
3 tbs dark
brown sugar
3 tbs
butter cut into pieces
Zest of 1
lime, 1 orange
1 tbs fresh
lime juice
1 tbs fresh
orange juice
Quarter cup
of white tequila
Preheat
oven to 400 degrees.
Butter
shallow baking dish. Cut mango halves into slices and arrange
slightly overlapping in prepared dish. Sprinkle with brown sugar and
dot with butter.
Scatter
lime and orange zest on top.
Drizzle
lime and orange juice on mago slices.
Bake until
mango begins to brown, about 20 minutes. Remove from oven,
Just before
serving, reheat on top of stove, sprinkle tequila over mangoes and
ignite with long match. Shake pan for a few minutes until flames die
out and serve with vanilla ice cream and mango sauce. |
