Further authentic Mexican recipes can be found on the Discovery Foods website: www.discoveryfoods.co.uk Serves: 4 Cooking: 20 minutes Preparation: 20 minutes Ingredients: 250g mascarpone cheese 400g strawberries, trimmed and thinly sliced Zest of 1 orange 1 pack Discovery Flour Tortillas Icing sugar Method: 1) Mix together mascarpone, strawberries and orange zest.   2) Sandwich the tortillas together with the filling and coat well on both sides with icing sugar. 3) Heat a frying pan until very hot. Cook the tortillas for just a few seconds on each side until the icing sugar is browned and slightly caramelised. 4) Cut into wedges and serve immediately.
