Ingredients:

125g TOTAL
Greek Yoghurt
200g plain flour
2 tsp baking
powder and 1tsp bicarbonate of soda
Pinch of salt
Pinch of ground nutmeg
2 tsp ground cinnamon

100g soft brown sugar
1 large egg
100g butter, melted
1 tsp vanilla essence
150g chunky
apple sauce

Method:
This is a quick and delicious
muffin recipe and so easy to make. It is much more economical than
buying a café muffin on the way to work or can be rustled up
on a Sunday morning with ease.
1. Combine all dry ingredients in
a bowl and in a separate bowl combine all of the liquid ingredients.
2. Mix the two sets of
ingredients together until evenly combined.
3. Spoon into muffin tin lined
with paper muffin cases.
4. Bake in a preheated oven at
200C / Gas Mark 6 for 12-15 minutes till golden and firm.
5. Cool slightly and lightly dust
with icing sugar before serving.
