Paperino's,
one of Glasgow's longest established and most popular Italian
restaurants, has introduced a specials menu featuring a selection of
traditional Neapolitan dishes with a contemporary twist.
Neapolitan
Bruno Vitrano, recently appointed manager at the Sauchiehall Street
restaurant, said that the thinking behind the introduction of a
specials menu was to offer Paperino's many long-term regular
customers a fresh selection of dishes.
Mr Vitrano
said, "Our specials include various traditional Italian
dishes - such as Tagliolini alla Toscana (Taglioni in an arrabiata
sauce with Italian sausage and wild mushrooms) - that we have revived
with a contemporary twist to suit the modern palate."
Amongst the
mouth-watering dishes on the specials menu are: starters such as
Gamberoni alla Griglia (grilled king prawns with a white wine sauce,
served with a salad garnish) and Provola alla pizzaiola (smoked
buffalo mozzarella in a cherry Napoli sauce topped with parmesan and
basil); mains such as Agnolotti alla aragosta (lobster ravioli in a
pink sauce with sage and parmesan) and Penne Vodka e Salmone (penne
pasta served with a garlic, cream, salmon and vodka sauce).
"Our
special desserts include champagne profiteroles as well as a choice
of traditional Italian cakes, the recipes of which have been modified
to make them less heavy and formal than traditional cuisine,"
said Mr Vitrano. "Our overall aim is to keep our specials
menu simple but satisfying for our regular customers."
The new
specials menu is introduced on a Friday and runs over the course of
the weekend. Just launched, it is already proving very popular with customers.
"As
well as placing our specials menu on each table, I make a point of
explaining the fresh ingredients of our various special dishes to
customers - and when they hear how these dishes are prepared, more
often than not, customers will proceed to select a dish from the
specials menu," said Mr Vitrano.
Brothers
Stefano and Sandro Giovanazzi opened Paperino's in Sauchiehall Street
in 1991. Renowned for its traditional Italian cuisine, offering an
extensive range of pasta, pizza and meat and fish dishes, it quickly
established its position as a firm favourite with Glasgow's Italian
community. Its success has been such that sister restaurant,
Paperino's West End, opened in Byres Road two and a half years ago.
