In a recent episode (aired Oct 30th) of his series 'In Search of Perfection', Heston Blumenthal travelled to Ireland and discovered the perfect breed of duck for creating his ultimate version of Peking Duck.

Silver Hill Farm in Co Monaghan is home to the unique breed of Silver Hill Hybrid ducks, which Heston agreed had 'the ideal ratio of meat to fat - perfect for Peking Duck'. The Steele family has evolved the breed through a selective breeding process which combines modern technology and 45 years of breeding experience.

During the programme, Heston saw first hand the unique Silver Hill process which begins at the incubation stage right through to final product which in his opinion results in a duck 'with the right qualities for Peking Duck'. Strict selection, obtained through ultra sound scanning of the fat levels and breast depth, ensures that those with the correct ratios are retained for breeding. This has resulted in a breed of duck which is consistently flavoursome, succulent and tender.
