Unveils Superb New Wine List

 

 

Just months after becoming only the fifth Indian restaurant in London to win a Michelin Star, Quilon Restaurant unveils a new world-class wine list.

The list has been compiled by Peter McCombie, one of the UK's most renowned Masters of Wine, and Quilon's Executive Chef, Sriram Aylur. Their goal was simple: to offer guests the opportunity to enjoy top quality wine alongside their Michelin-starred food.

Peter and Sriram have handpicked a remarkably extensive line-up that complements the contrasting flavours and subtle textures featured on the menu.

Explains Peter: "All of the wines on our wine list have been chosen because of their quality and character, but our first criterion was to find wines that we personally liked. Then we looked for wines which fitted some broad stylistic categories. For example many Italian white wines are dry and have understated character. These wines have enough personality to stand up to the bold flavours of Sriram's cooking, without fighting with them. Soft and rounded, Rhone-style whites are another winner with this cuisine".

Some purists argue that red wines are inappropriate with Indian food; chilli can have an irritant effect on the palate making tannic wines seem harsher than they actually are. Thus Peter and Sriram have opted for generous reds with supple tannins. In varietal terms this means grapes such as Pinot Noir and in terms of origins, warmer regions and countries, notably Spain, Italy and the south of France.

The new offering features a great balance between Classical and New World wines, plus an excellent selection at all price points, from a 2006 Domaine Bousquet Tradition at £20 through to a 1986 Chateau Cheval Blanc at £400.

Quilon's new wine list will also include two Indian varieties, the popular Grover's Sauvignon Blanc and La Reserve.

In a rare move for a restaurant, Quilon will also be offering 85 wines as 375ml half bottles. Served by the carafe, this unrivalled selection will present diners with an even greater choice.

  The list also includes 12 beers - including such renowned brews as Brooklyn Lager, Deus Beer and Liefman's Frambozen - and no less than six varieties of Sake, an excellent accompaniment to Quilon's legendary seafood dishes from South West Coastal India.
