Santini Introduces New
Limited Edition Menus

 

 

Diners at Santini restaurant in Edinburgh can enjoy a series of new limited edition menus inspired by four celebrated regions of Italy from 5 October 2009. Each regional menu will be available for two weeks, beginning with Sicily, then Tuscany, Veneto and Piedmont.

The award-winning Executive Chef of Santini restaurant, Malcolm Webster, has introduced the new series of menus so diners can experience an authentic gourmet 'tour' of Italy's best foodie hotspots. The team at Santini researched the dishes by using local knowledge of the traditional cuisine in the four different regions.

Sicily, an island in the Mediterranean, is known for its citrus orchards and fresh vegetables which are often combined with seafood. Santini's Sicilia menu includes Sarde a Beccafico (pan fried sardines stuffed with breadcrumbs, pecorino, garlic and Mediterranean herbs), Tonno alla Griglia con Contorno di Caponata alla Siciliana (char-grilled tuna with Sicilian caponata vegetables) and Cassata alla Siciliana (Sicilian style ricotta cake with candied fruits and marzipan).

The cuisine of the hilly region of Tuscany, in northern Italy, is simple, hearty and flavoursome. Santini's Toscana menu features Panzanella Toscana (salad of tomatoes, red onion, capers, basil and Tuscan bread) and Gnocchi alla Fiorentina (homemade spinach gnocchi with sage butter and tomato sauce), with Panforte di Siena (spiced fruit and nut cake) for dessert.

The coastal region of Veneto, also in northern Italy and boasting the city of Venice as its capital, is known for its diverse cuisine. Each town has its own traditional dishes. Santini's Veneto menu includes Baccala alla Veneziana (slow cooked cured cod with milk, celery and potatoes), Fegato di Bue alla Veneziana (classic Venetian pan seared calf's liver with caramelised onion and red wine), and Sgroppino (lemon sorbet with prosecco).

Lastly, Santini's Piemonte menu draws on the key ingredients of arborio rice, porcini mushrooms, truffles, chocolate and hazelnut, with Stagionale Cacciagione con Zucca Gialla alla Griglia (seasonal game and char-grilled pumpkin salad), Risotto alla Piemontese (risotto with parmesan, nutmeg and truffle), and Torte Novecento (chocolate sponge with chocolate hazelnut pastry cream). The fresh white truffle in the Piemonte menu has been sourced direct from the region.

Each menu is accompanied by specially selected wines from the region. Prices begin at £5.50 for a starter, £12.00 for a main course and £6.50 for dessert.
