Small, shiny, dark green leaves of a small tree which belongs to the citrus family. The tree is found wild in much of South Asia and the leaves are used as a herb to flavour food in the Southern and Western coastal regions of India in particular. Fragrant and unique in flavour, they can be fried with the initial spicing preparation or added at the very last stage for a fuller impact.
